Jever have real red enchilada sauce?

I mean fuckin’ realllll red enchilada sauce?

I have. And I managed to document most of it.

RED ENCHILADA SAUCE

2 tablespoons oil (cheap vegetable will do, I use grapeseed oil)
2 tablespoons Masa flour (If you’re a cornpone fuck off and use AP flour you shameful son of a bitch)

2-4 TBS Baker's Chocolate

4 TBS chili powder (I add 1 TBS smoked paprika)
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp ground cumin
1/4 tsp dried oregano
1/2 tsp MSG

2 cups chicken stock

Optional but necessary-
3 dried pasilla-ancho pods
2 dried guajillo pods
2 dried new Amex pods
All Seeds removed then placed in hot water to rehydrate then food processor to mush

DIRECTIONS:
1. Make the Roux. Heat oil in a small saucepan over medium-high heat. Add flour and whisk together over the heat for one minute at least. Drop heat to low. Let that shit rehydrate.
2. Sauce it up by throwing in the dry seasonings. Add the chocolate last. THESE MEASUREMENTS ARE MINIMUMS. Add more to taste.
3. Sauce it up saucier. Gradually add the stock, whisking constantly to remove lumps. Add the pepper mush. Reduce heat and simmer til thickened.
